  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 slices thick-cut bacon
  • 8 slices sharp cheddar cheese
  • 12 Hawaiian rolls, split horizontally
  • Optional: dill pickle slices, ketchup, mustard, mayonnaise

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon: Lay bacon slices in a cold skillet and cook over medium heat until crispy, about 6-8 minutes. Flip occasionally for even crispness. Transfer cooked bacon to paper towels to drain excess fat.
  3. Prepare the beef patties: In a medium bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently with your hands. Form 12 small patties, about 2 inches wide and ¼ inch thick.
  4. Cook the patties: In the same skillet (drain excess bacon fat if needed), cook patties over medium-high heat for about 3 minutes per side. When flipping the second side, place a slice of cheddar on each patty and cover the skillet with a lid or foil for 1-2 minutes to melt the cheese.
  5. Toast the Hawaiian rolls: Slice rolls horizontally but keep them in a block. Place cut-side up on a baking sheet and toast in the oven for 5 minutes until lightly golden and crisp on the edges.
  6. Assemble the sliders: Place cooked patties with melted cheese on the bottom half of the rolls. Top each with a slice of crispy bacon and optional pickles or condiments. Cover with the top half of the roll.
  7. Warm sliders together: Lightly cover the assembled sliders with foil and bake for another 5 minutes to meld flavors and warm through.
  8. Serve immediately.

Notes

Do not over-press the patties to keep them juicy. Use a lid to melt cheese evenly. Toast rolls to prevent sogginess. Let patties rest briefly before assembling.
