  • 8 ounces fresh mozzarella, sliced
  • 2 large ripe tomatoes, sliced
  • 1/3 cup fresh basil leaves, loosely packed

  • 1 teaspoon garlic powder
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

Instructions

  1. Pat the chicken breasts dry with paper towels. Brush both sides lightly with olive oil. Season evenly with garlic powder, salt, and black pepper. Let rest at room temperature for about 10 minutes.
  2. In a small saucepan over medium heat, combine balsamic vinegar and honey or brown sugar. Bring to a gentle boil, then reduce heat to low and simmer, stirring occasionally, until thickened and coats the back of a spoon, about 10-12 minutes. Remove from heat and let cool slightly.
  3. Slice tomatoes and mozzarella into 1/4 inch thick slices. Wash and dry basil leaves.
  4. Preheat grill or grill pan over medium-high heat. Grill chicken breasts for 6-7 minutes per side (12-14 minutes total), flipping once, until internal temperature reaches 165°F (74°C).
  5. Immediately layer mozzarella and tomato slices on each hot chicken breast. Top with fresh basil leaves.
  6. Drizzle balsamic glaze generously over the assembled chicken. Optionally, add a light sprinkle of freshly ground black pepper.
  7. Let chicken rest for 3-5 minutes before serving to allow flavors to meld. Serve warm.

Make the balsamic glaze ahead and refrigerate; warm gently before use. Use a meat thermometer for perfectly cooked chicken. Layer mozzarella and tomato while chicken is hot but not on direct heat to soften cheese without melting it too much. Avoid microwaving leftovers to preserve texture.
