  • 1 tablespoon fresh lime juice

Instructions

  1. Peel the pineapple, slice off the crown and base, then cut into 1/2-inch thick rings or wedges (about 6-8 slices). Remove the tough core from the center of each slice using a small round cutter or a knife.
  2. In a small bowl, combine 4 tablespoons of softened unsalted butter with 1 teaspoon ground cinnamon and 2 tablespoons granulated sugar. Add a pinch of nutmeg or allspice if using. Mix well until smooth and fully combined. Optionally, stir in the tablespoon of fresh lime juice. Set aside.
  3. Preheat your grill to medium-high heat, around 375°F (190°C). If using charcoal, let the coals burn down to a steady heat.
  4. Place pineapple slices directly on the grill grates. Cook for about 3-4 minutes per side, brushing each side generously with the cinnamon sugar butter before flipping. Avoid charring the pineapple black.
  5. Check for doneness: pineapple should be tender but still hold its shape, with a golden glaze from the cinnamon sugar butter. Total grill time is around 8 minutes.
  6. Transfer the grilled pineapple to a serving plate and spoon any leftover cinnamon sugar butter over the top. Serve warm.
