Flavorful Honey Lime Grilled Chicken with Fresh Pineapple Salsa

A quick and easy grilled chicken recipe marinated in honey lime with a fresh, vibrant pineapple salsa that brings a tropical burst of flavor to your plate.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 1/4 cup honey
  • Juice of 2 fresh limes (about 1/4 cup or 60 ml)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 cup fresh pineapple, diced
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely chopped (optional)
  • Juice of 1 lime (about 2 tablespoons or 30 ml)
  • Salt to taste

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together honey, fresh lime juice, minced garlic, olive oil, ground cumin, salt, and pepper until fully combined.
  2. Marinate the Chicken: Place the chicken breasts in a shallow dish or zip-top bag. Pour the marinade over the chicken, making sure each piece is evenly coated. Let it marinate in the fridge for at least 20 minutes, preferably 1-2 hours.
  3. Make the Pineapple Salsa: While the chicken marinates, toss together diced pineapple, red onion, chopped cilantro, jalapeño (if using), lime juice, and a pinch of salt in a bowl. Cover and refrigerate until serving.
  4. Preheat the Grill or Pan: Heat your grill or grill pan to medium-high heat (around 400°F / 204°C).
  5. Grill the Chicken: Remove chicken from marinade, letting excess drip off. Grill for about 5-7 minutes per side until grill marks appear and internal temperature reaches 165°F (74°C).
  6. Rest the Chicken: Transfer grilled chicken to a plate and let rest for 5 minutes to redistribute juices.
  7. Serve: Slice the chicken against the grain and spoon generous portions of fresh pineapple salsa on top or on the side.

Notes

Avoid flipping the chicken too often to develop a caramelized crust. Use a meat thermometer to ensure chicken is cooked to 165°F (74°C). Make pineapple salsa fresh or a few hours ahead and keep it refrigerated. Store chicken and salsa separately for best freshness. For indoor cooking, use a grill pan or cast iron skillet.
