  • 8 ounces cream cheese, softened (full-fat recommended)
  • 2 tablespoons fresh dill, finely chopped
  • 1/4 teaspoon garlic powder
  • 1 teaspoon freshly squeezed lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Optional: capers or finely chopped chives for added flavor

Instructions

  1. Slice the cucumber lengthwise into thin ribbons about 1/8 inch thick using a mandoline or sharp knife.
  2. In a mixing bowl, combine softened cream cheese, chopped fresh dill, garlic powder, lemon juice, salt, and pepper. Mix until smooth and fluffy.
  3. Lay each cucumber slice flat and spread a thin, even layer of the cream cheese mixture over the entire slice.
  4. Starting at one end, gently roll the cucumber slice into a tight spiral. Secure with a toothpick if needed.
  5. Place roll-ups seam side down on a plate and chill for 10-15 minutes before serving to firm up and meld flavors.

Notes

If cucumber ribbons feel too stiff or dry, sprinkle lightly with salt and let sit for 5 minutes before rolling to draw out moisture. Use room temperature cream cheese for easier spreading. Chill roll-ups before serving to firm up and blend flavors. For vegan option, substitute cream cheese with plant-based cream cheese or cashew cream.
