Fresh Cucumber Watermelon Salad with Feta and Mint

Fresh Cucumber Watermelon Salad - featured image

A quick, light, and refreshing summer salad combining juicy watermelon, crisp cucumber, salty feta, and fresh mint with a zesty lime dressing.

Ingredients

Scale
  • 4 cups seedless watermelon, cubed into bite-sized pieces
  • 1 medium English cucumber, thinly sliced or diced
  • ½ cup feta cheese, crumbled or cut into small chunks
  • ¼ cup fresh mint leaves, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Pinch of sea salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Cut about 4 cups (about 600 grams) of seedless watermelon into bite-sized cubes, aiming for uniform pieces.
  2. Thinly slice or dice 1 medium English cucumber (about 200 grams). Optionally remove thick skin and pat dry with a paper towel.
  3. Finely chop about ¼ cup of fresh mint leaves.
  4. In a large bowl, gently toss together the watermelon cubes, cucumber slices, and chopped mint. Add ½ cup of crumbled or chunked feta cheese, folding carefully to keep the feta intact.
  5. Drizzle 2 tablespoons of extra virgin olive oil and 1 tablespoon of fresh lime juice over the salad. Sprinkle with a pinch of sea salt and freshly cracked black pepper to taste. Toss gently to combine all flavors without breaking the watermelon or feta.
  6. Taste and adjust seasoning if needed, adding extra lime juice or salt to brighten flavors.
  7. Serve immediately or within 30 minutes for best texture and freshness.

Notes

Use ripe but firm watermelon to avoid mushiness. Pat cucumbers dry to keep salad crisp. Handle feta gently to keep chunks intact. Make salad close to serving time or keep dressing separate if prepping ahead. Optional additions include toasted pepitas or walnuts for crunch, or jalapeño for heat.
