Fresh Garden Tomato Basil Bruschetta Bites – Easy Appetizer

A simple, fresh appetizer made with ripe tomatoes, basil, garlic, and crusty baguette. Perfect for summer parties or a light lunch.

  • 45 medium ripe tomatoes (or 67 Roma tomatoes)
  • 1012 large fresh basil leaves
  • 23 cloves garlic
  • 34 tablespoons extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt and black pepper to taste
  • 1 large or 2 small baguettes
  • Optional: balsamic glaze for drizzling

Instructions

  1. Wash and dry tomatoes. Cut in half horizontally, gently squeeze out seeds and excess jelly, then dice into 1/4 to 1/2 inch pieces. Place in a mixing bowl and sprinkle with a pinch of salt. Let sit for 5 minutes.
  2. Stack basil leaves, roll tightly, and slice crosswise into thin ribbons (chiffonade). Mince 1 clove of garlic finely. Add both to the bowl with tomatoes.
  3. Drizzle olive oil and balsamic vinegar over the tomato mixture. Add black pepper. Gently toss to combine. Let sit at room temperature for 10-15 minutes.
  4. Preheat oven broiler to high. Slice baguette on a slight diagonal into 1/2-inch thick pieces. Arrange in a single layer on a baking sheet. Lightly brush or drizzle both sides with olive oil.
  5. Broil for 1-2 minutes per side until golden brown and crispy. Watch carefully to avoid burning.
  6. As soon as bread comes out of the oven, rub the cut side of the remaining garlic clove (cut in half) over the warm toasted surface of each slice.
  7. Just before serving, use a slotted spoon to pile the tomato mixture onto each toasted baguette slice. Drizzle with balsamic glaze if desired. Garnish with a small basil leaf or flaky sea salt. Serve immediately.

Notes

For best results, use the ripest tomatoes you can find. Salting the tomatoes first draws out excess moisture and prevents soggy bread. Assemble just before serving. The tomato mixture can be made up to 2 hours ahead and kept at room temperature.
