A quick and easy summer recipe featuring fresh heirloom tomatoes, creamy burrata cheese, and fragrant basil, drizzled with olive oil and aged balsamic vinegar for a fresh, indulgent experience.

  • 3 medium heirloom tomatoes, sliced thick
  • 1 ball (8 oz) creamy burrata cheese
  • A handful of fresh basil leaves, roughly torn or whole
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • Optional: crushed red pepper flakes
  • Optional: drizzle of honey

Instructions

  1. Wash and slice the heirloom tomatoes about 1/4-inch thick. Arrange slices evenly on a serving plate or wooden board, overlapping slightly.
  2. Remove burrata from container and pat dry excess liquid. Tear or slice burrata into chunks and place across the tomatoes.
  3. Scatter fresh basil leaves over the tomatoes and burrata, tearing by hand to release oils.
  4. Sprinkle flaky sea salt and freshly ground black pepper over the entire dish.
  5. Drizzle 2 tablespoons of extra virgin olive oil evenly over the salad, followed by 1 tablespoon of aged balsamic vinegar. Adjust vinegar amount to taste.
  6. Optionally, add a sprinkle of crushed red pepper flakes or a light drizzle of honey to enhance flavor.
  7. Let the salad rest at room temperature for about 5 minutes before serving to allow flavors to meld.

Notes

Use ripe but firm heirloom tomatoes to avoid sogginess. Pat dry burrata to prevent excess moisture. Tear basil by hand to preserve flavor. Use quality olive oil and aged balsamic vinegar for best taste. Serve at room temperature for optimal flavor. Can substitute fresh mozzarella if burrata is unavailable. For dairy-free, use cashew cream spread.
