Ingredients

Scale
  • Whole-grain sandwich bread, soft fresh slices
  • 4 ounces (115g) cream cheese, softened
  • 1 tablespoon mayonnaise (dairy-free optional)
  • 1 tablespoon fresh dill or parsley, finely chopped (optional)
  • ½ cup (about 70g) shredded cooked chicken or turkey, finely chopped (can substitute canned tuna or plant-based protein)
  • ¼ cup (30g) thinly sliced cucumber
  • ¼ cup (30g) shredded carrot
  • 23 slices cheddar or mozzarella cheese (optional)
  • Salt and pepper, to taste
  • Dinosaur-shaped cookie cutters, small to medium size (3-4 inches / 7-10 cm)

Instructions

  1. Prepare the filling: In a mixing bowl, combine softened cream cheese, mayonnaise, and finely chopped herbs. Stir until smooth and well blended.
  2. Mix in protein and veggies: Add finely chopped cooked chicken (or chosen protein), shredded carrot, and cucumber. Season with salt and pepper, then gently fold together until moist but not runny.
  3. Prepare the bread: Lay out sandwich bread slices and trim crusts if desired. Spread a generous layer of filling evenly on half the slices.
  4. Assemble sandwiches: Place cheese slices if using, then top with remaining bread slices to form sandwiches.
  5. Cut dinosaur shapes: Press the dinosaur-shaped cookie cutter firmly into each sandwich. Wiggle slightly for a clean cut, then lift carefully. If filling oozes out, gently press sandwich edges back together.
  6. Pack the bento box: Place dinosaur sandwiches in lunchbox compartments. Add fresh fruit like grapes or apple slices, and optionally a small container of yogurt or crackers.
  7. Store until ready to eat: Keep lunchbox refrigerated until lunchtime to maintain freshness.

Notes

Keep filling thick to avoid sogginess. Chill sandwiches for 10 minutes before cutting if bread is very soft. Wrap sandwiches tightly in wax paper or use lunchbox dividers to keep bread from drying out. Prepare filling the night before for quick morning assembly. Cookie cutters can be any fun shape if dinosaur cutters are unavailable.
