A bright and zesty salsa combining sweet peaches, spicy jalapeño, fresh cilantro, and lime juice for a refreshing and flavorful dip or topping.

  • 3 medium peaches, peeled and diced
  • 1 medium jalapeño, seeded and finely chopped (leave seeds in for extra heat)
  • ½ cup fresh cilantro, roughly chopped
  • Juice of 2 limes (about 3 tablespoons)
  • ¼ cup red onion, finely diced
  • 1 small garlic clove, minced
  • ½ teaspoon salt, or to taste
  • 1 teaspoon honey or agave syrup (optional)

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunging into ice water to loosen skins (about 5 minutes). Dice into small, uniform ½-inch cubes.
  2. Slice the jalapeño in half lengthwise, scoop out seeds if less heat is desired, then finely dice.
  3. Finely dice the red onion and mince the garlic.
  4. Rough chop the cilantro leaves and tender stems, avoiding chopping too finely to keep texture.
  5. In a mixing bowl, gently toss together the peaches, jalapeño, red onion, garlic, and cilantro.
  6. Add the fresh lime juice, salt, and honey (if using). Stir gently to combine all flavors evenly. Taste and adjust salt or lime juice as needed.
  7. Let the salsa rest at room temperature for 15-20 minutes to allow flavors to meld and the lime juice to slightly ‘cook’ the fruit.
  8. Serve chilled or at room temperature.

Notes

Use ripe but firm peaches to avoid mushiness. Adjust jalapeño seeds to control heat. Letting the salsa rest enhances flavor melding. Can substitute parsley, basil, or mint for cilantro. Honey can be replaced with maple syrup for a vegan option. Store leftovers in an airtight container in the refrigerator for up to 3 days. Not recommended to freeze.
