Fresh Peach Salsa with Jalapeño and Lime

A quick and easy fresh peach salsa with jalapeño and lime that offers a sweet, spicy, and tangy flavor perfect for tacos and more.

Ingredients

  • 3 medium fresh peaches, ripe but firm
  • 1 medium jalapeño pepper, seeded or with seeds depending on heat preference
  • ¼ cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro (optional)
  • Juice of 1 lime (about 2 tablespoons)
  • ½ teaspoon kosher salt
  • A pinch of freshly ground black pepper
  • 1 teaspoon honey or agave syrup (optional, if peaches aren’t sweet enough)

Instructions

  1. Wash and dry the peaches. Dice them into small, even cubes about ½ inch (1.3 cm).
  2. Slice the jalapeño in half lengthwise and remove seeds if less heat is desired. Finely dice about 1 tablespoon.
  3. Finely chop ¼ cup of red onion and add to a mixing bowl.
  4. Roughly chop 2 tablespoons of fresh cilantro leaves and add to the bowl (optional).
  5. Add the lime juice, salt, and black pepper to the bowl. If peaches are less sweet, add a teaspoon of honey or agave syrup.
  6. Gently stir to combine without mashing the fruit.
  7. Taste and adjust by adding more lime juice or jalapeño if desired.
  8. Let the salsa sit for 5 minutes if possible to allow flavors to meld, or serve immediately.
