A fresh and smoky guacamole featuring charred corn that brings a sweet and smoky twist to the classic dip, perfect for summer gatherings and poolside snacking.

  • 3 ripe Hass avocados, peeled and pitted
  • 2 ears fresh corn on the cob, husked
  • 1/4 cup finely diced red onion
  • 1 medium Roma tomato, seeded and diced
  • 1 small jalapeño, finely minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 2 limes
  • 1 small clove garlic, minced
  • 1 teaspoon salt, or to taste
  • Freshly ground black pepper, a pinch or two

Instructions

  1. Heat your grill or grill pan over medium-high heat. Place the husked corn ears directly on the grill and turn every 2-3 minutes until kernels are evenly charred and smoky, about 8-10 minutes total. Let cool slightly, then slice the kernels off the cob with a sharp knife.
  2. While the corn cools, finely dice the red onion, Roma tomato, and jalapeño. Chop the cilantro and mince the garlic. Keep these ready in separate bowls.
  3. In a medium mixing bowl, scoop the avocado flesh and mash with a fork or masher until mostly smooth but with some chunks left for texture.
  4. Add the charred corn kernels, diced onion, tomato, jalapeño, garlic, and cilantro to the mashed avocado. Stir gently to combine without over-mashing.
  5. Squeeze the juice of two limes over the mixture. Add salt and freshly ground black pepper. Stir gently and taste. Adjust salt or lime juice as needed.
  6. Let the guacamole sit for 5-10 minutes at room temperature to allow flavors to meld. Serve with tortilla chips or crisp veggies.

Notes

Use ripe but firm avocados to avoid watery guacamole. Do not over-mash to keep some texture. Fresh lime juice is essential to prevent browning and brighten flavors. If preparing ahead, add tomatoes just before serving to avoid sogginess. Frozen corn can be used if fresh is unavailable; thaw and pat dry before charring.
