  • 1 small yellow bell pepper, thinly sliced
  • 1/2 medium cucumber, peeled and thinly sliced
  • 68 cherry tomatoes, halved (optional)
  • 1 tbsp fresh herbs like dill or parsley, finely chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Mix the spread: In a medium bowl, combine 8 oz softened cream cheese and 1/4 cup plain Greek yogurt. Stir well until smooth and creamy. Add finely chopped fresh herbs if using, plus a pinch of salt and pepper. (About 3 minutes)
  2. Prepare the veggies: Wash and dry all vegetables. Thinly slice the cucumber and bell peppers into matchstick-sized strips. Shred the carrots finely. Halve the cherry tomatoes if using. (Approximately 7 minutes)
  3. Lay out the tortillas: Place one large tortilla flat on your work surface. Using a spatula or butter knife, spread a thin, even layer of the cream cheese mixture over the entire surface, covering edge to edge without overloading.
  4. Add the greens and veggies: Layer fresh spinach leaves evenly over the spread. Arrange sliced veggies in neat rows across the tortilla creating a rainbow effect — red bell pepper, yellow bell pepper, shredded carrots, cucumber, and cherry tomatoes if using. (About 5 minutes)
  5. Roll it up tightly: Starting at one edge, gently but firmly roll the tortilla into a tight log. Avoid squeezing too hard to prevent veggies from spilling out. (About 2 minutes)
  6. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 20 minutes to help it set and make slicing easier.
