A quick, refreshing summer snack featuring juicy watermelon rounds topped with salty feta, fresh mint, and a hint of lime. Perfect for parties and easy to prepare in under 15 minutes.

  • 1 large seedless watermelon, cut into 1-inch thick round slices (810 inches in diameter)
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, torn or chopped
  • Juice of 1 lime
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly cracked black pepper, to taste
  • Sea salt, a light sprinkle (optional)

Instructions

  1. Rinse and dry the watermelon. Slice into 1-inch thick rounds approximately 8-10 inches in diameter. Lay slices on a plate or cutting board and let rest for 5 minutes to drain excess juice.
  2. Rinse and pat dry fresh mint leaves. Tear or chop into small pieces and toss with fresh lime juice in a small bowl.
  3. Crumble the feta cheese into small pieces using a fork.
  4. Sprinkle crumbled feta evenly over the watermelon slices. Scatter the lime-tossed mint leaves on top.
  5. Drizzle with extra virgin olive oil if using, then add freshly cracked black pepper and a light sprinkle of sea salt to taste.
  6. Serve immediately for best freshness. If preparing ahead, keep components separate and assemble just before serving.

Notes

Use a firm, seedless watermelon for best results. Slice evenly about 1 inch thick to keep the pizza sturdy. Assemble just before serving to avoid sogginess. Optional toppings include blueberries or strawberries for a patriotic look, or substitute basil for mint. For a dairy-free version, use vegan feta or marinated tofu.
