  • 8 ounces block feta cheese, cut into 1-inch cubes
  • 1/4 cup fresh mint leaves, finely chopped for glaze plus whole leaves for threading
  • 1/3 cup balsamic glaze
  • 1 tablespoon honey (optional, for glaze)
  • Wooden or bamboo skewers, about 12 inches long

Instructions

  1. Cut the watermelon into 1-inch cubes, removing any seeds or rind.
  2. Slice the block feta into 1-inch cubes, aiming for uniform pieces.
  3. In a small bowl, whisk together the balsamic glaze, finely chopped fresh mint, and honey until combined. Add a teaspoon of water if a thinner glaze is desired.
  4. Thread the skewers starting with a watermelon cube, then a mint leaf, followed by a feta cube, repeating once more or until the skewer is filled but not overcrowded. Leave space on each end for handling.
  5. Arrange the skewers on a serving platter and spoon the mint balsamic glaze evenly over them.
  6. Serve immediately or chill for about 15 minutes to let flavors meld. If chilling, cover loosely with plastic wrap.
