  • 1 cup mascarpone cheese, chilled
  • Fresh basil or mint leaves (optional, for garnish)

Instructions

  1. Wash and halve 4 ripe but firm peaches. Remove the pits carefully with a knife or spoon. Set aside.
  2. In a mixing bowl, combine 3 tablespoons honey, 2 finely minced garlic cloves, 1 teaspoon fresh lemon juice, and a pinch of freshly cracked black pepper. Stir until well blended.
  3. Lightly brush the cut sides of the peaches with 1 tablespoon olive oil to prevent sticking. Then, generously brush the honey garlic glaze on the cut sides. Reserve some glaze for after grilling.
  4. Preheat your grill to medium-high (around 375°F or 190°C). Make sure the grates are clean and lightly oiled.
  5. Place peaches cut-side down on the grill. Grill for 3-4 minutes without moving them to get grill marks. Flip carefully using tongs, then grill the skin side for an additional 2-3 minutes until peaches are tender but not mushy.
  6. During the last minute of grilling, brush the cut sides again with reserved honey garlic glaze and let it caramelize slightly.
  7. Transfer peaches to a serving plate and let cool for 2-3 minutes.
  8. Dollop about 1/4 cup (60g) of chilled mascarpone on each peach half. Garnish with fresh basil or mint leaves if desired.
  9. Serve warm or at room temperature for the best flavor balance.

Use firm peaches to prevent them from falling apart on the grill. Warm honey slightly if too thick to brush easily. Watch grill temperature carefully to avoid mushy or burnt peaches.
