  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 1/2 cups (180g) powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Orange food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed for about 3-4 minutes until light, fluffy, and pale in color. Scrape down the sides of the bowl halfway through.
  3. Beat in the room-temperature egg and vanilla extract on low speed until just combined.
  4. In a separate small bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed in two or three additions, just until the flour disappears. The dough should be soft and slightly sticky.
  6. Use a cookie scoop or tablespoon to scoop out rounded balls of dough, about 1.5 tablespoons each. Place them 2 inches apart on the prepared baking sheets.
  7. Bake for 10-12 minutes, or until the edges are just set and lightly golden. The centers will look slightly underdone and puffy.
  8. Let the cookies rest on the baking sheet for 5 minutes, then transfer them to a cooling rack to cool completely.
  9. While the cookies cool, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract in a small bowl. Add more milk a teaspoon at a time until you reach a thick but pourable consistency. Add food coloring if desired.
  10. Once the cookies are completely cool, spoon a small amount of icing onto the center of each cookie and spread gently to the edges. Let the icing set for about 30 minutes.

Notes

Don’t overmix the dough once flour is added to avoid tough cookies. If the dough feels too sticky, chill for 15 minutes. Start checking cookies at 9 minutes to prevent overbaking. Let cookies cool completely before icing to prevent the icing from melting. For faster icing set, refrigerate iced cookies for 10-15 minutes.
