Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt (Diamond Crystal recommended; reduce to 1/4 teaspoon if using table salt)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper (optional)
  • 4–5 fresh thyme sprigs (for garnish, optional)
  • Flaky sea salt (for finishing, optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly. Cut off both ends, slice each squash in half lengthwise, and scoop out the seeds and stringy bits with a spoon.
  3. Place each squash half flat-side down and slice crosswise into 1/2-inch thick half-moons.
  4. In a medium mixing bowl, whisk together the maple syrup, olive oil, kosher salt, black pepper, cinnamon, and cayenne pepper (if using) until well combined and emulsified.
  5. Add the sliced squash to the bowl and toss until every piece is evenly coated.
  6. Arrange the squash pieces in a single layer on the prepared baking sheet, leaving at least 1/2 inch between each piece to avoid overcrowding.
  7. Roast for 15 minutes on the middle rack. Do not open the oven door during this time.
  8. After 15 minutes, remove the baking sheet and flip each piece of squash. Rotate the baking sheet front to back for even browning.
  9. Roast for another 10-15 minutes, until the squash is tender when pierced with a fork and the edges are deeply caramelized and crispy. Watch carefully during the last few minutes to prevent burning.
  10. Remove from the oven and let the squash rest on the pan for 2-3 minutes. Transfer to a serving platter, garnish with fresh thyme sprigs and a sprinkle of flaky sea salt if desired. Serve warm or at room temperature.

Notes

Don’t skip the high heat (425°F) for crispy edges. Space the squash pieces at least 1/2 inch apart to avoid steaming. Watch the maple syrup carefully during the last 5 minutes to prevent burning. Use parchment paper for easy cleanup. Season in layers with a final sprinkle of flaky sea salt.
