  1. Preheat your oven to 350°F (175°C). Line your 9×9 pan with parchment paper, leaving an overhang on two opposite sides. Lightly spray the parchment with non-stick spray.
  2. Make the gingerbread crust: In a medium bowl, combine the graham cracker crumbs, melted butter, molasses, brown sugar, ginger, cinnamon, cloves, and salt.   7. Pour the filling over the crust: Pour the cheesecake mixture over the warm crust and spread it into an even layer. Tap the pan gently on the counter a few times to release any air bubbles.
  8. Bake the cheesecake bars: Place the pan in the preheated oven and bake for 30-35 minutes, or until the edges are set and the center jiggles slightly when you gently shake the pan. Do not overbake.
  9. Cool completely: Place the pan on a wire rack and let it cool to room temperature, about 1 hour. Then transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
  10. Make the cream cheese frosting: In a medium bowl, beat the cold cream cheese and softened butter together until smooth and creamy. Gradually add the powdered sugar, beating on low speed. Add the vanilla extract and 1 tablespoon of milk, then beat on medium speed until fluffy. Add more milk if needed to reach a spreadable consistency.
