A quick and easy one-skillet dinner featuring ground beef, rice, and a sweet-savory honey garlic sauce. Perfect for busy weeknights, this 30-minute meal is forgiving, flexible, and delicious.

Ingredients

Scale
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 ½ cups low-sodium chicken broth
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 pound lean ground beef (93% lean)
  • 1 cup uncooked white rice (long-grain, basmati, or jasmine)
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • ½ cup frozen peas
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together honey, low-sodium soy sauce, minced garlic, rice vinegar, and sesame oil. Set aside.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned and no longer pink (about 5 minutes). Drain excess fat if needed.
  3. Add diced onion and carrots to the skillet. Cook for 2 minutes, stirring occasionally, until onion is translucent and carrots begin to soften.
  4. Pour uncooked rice into the skillet and stir to combine with beef and vegetables. Pour honey garlic sauce over everything and stir to coat.
  5. Add chicken broth and stir. Increase heat to high and bring to a boil.
  6. Reduce heat to low, cover with a tight-fitting lid, and simmer for 18-20 minutes. Do not lift the lid during cooking.
  7. Remove lid carefully. Rice should be tender and liquid mostly absorbed. If rice is still firm, add 2-3 tablespoons more broth, cover, and cook 2-3 minutes longer.
  8. Stir in frozen peas. Let residual heat warm them through (about 1 minute). Taste and adjust seasoning if needed.
  9. Sprinkle with sliced green onions and sesame seeds. Serve hot.

Notes

For best results, do not lift the lid during simmering. If rice looks wet at the end, let it rest off heat, covered, for 5 minutes. Toasting the rice for 60 seconds before adding broth adds a nutty flavor. Use low-sodium soy sauce and broth to control saltiness.
