  • 1/4 cup chopped green onion (white and green parts)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup almond flour (super fine)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder (for coating)

  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside. If you have a cooling rack that fits on the baking sheet, place it on top for extra crispy bites.
  2. Cook the bacon until crispy. I prefer baking mine on a foil-lined sheet at 400°F for about 15 minutes—no flipping needed and way less mess than stovetop. Let it cool completely, then crumble into small pieces. Pro tip: save a tablespoon of bacon fat to add to the filling for extra flavor.
  3. Prepare the jalapeños. Wearing gloves (or washing your hands immediately after), remove the stems and slice each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes. Finely chop enough to get 1/4 cup. If you want a milder bite, blanch the chopped jalapeños in boiling water for 30 seconds, then drain and pat dry.
  4. Make the filling. In a large bowl, combine the softened cream cheese and Greek yogurt. Mix until smooth and creamy—a hand mixer works great here, but a sturdy spatula will do. Add the shredded cheddar, crumbled bacon, chopped jalapeño, green onion, garlic powder, and smoked paprika. Stir until everything is evenly distributed. Season with salt and pepper to taste. The filling should be thick enough to hold its shape when scooped.
  5. Chill the filling (optional but recommended). Pop the bowl in the refrigerator for 15-20 minutes. This makes the mixture easier to handle and helps the bites hold their shape during coating.
  6. Set up your coating station. In one shallow bowl, beat the two eggs until smooth. In another shallow bowl, combine the almond flour, grated Parmesan, garlic powder, and smoked paprika. Stir with a fork to break up any clumps.
  7. Form and coat the bites. Using your cookie scoop or a tablespoon, portion out the filling and roll into 1-inch balls (about 24 total). Working one at a time, dip each ball into the beaten egg, letting any excess drip off. Then roll it in the almond flour mixture, pressing gently so the coating adheres. Place on the prepared baking sheet, spacing them about an inch apart.
  8. Bake until golden and crispy. Spray the tops of the bites lightly with cooking spray—this helps them brown beautifully. Bake for 15-18 minutes, or until the coating is golden brown and the filling is hot and bubbly. If you want extra crispiness, turn on the broiler for the last 1-2 minutes, watching carefully so they don’t burn.
  9. Let them rest. Allow the bites to cool on the baking sheet for 5 minutes before serving. This lets the filling set slightly so they don’t fall apart when you pick them up.

Notes
