Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water and honey. Sprinkle the yeast over the top and let it sit for 5-7 minutes until foamy.
  2. Make the dough: Add the Greek yogurt, salt, whole wheat flour, and all-purpose flour to the yeast mixture. Stir until a shaggy dough forms. Turn out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  3. First rise: Place the dough back in the bowl, cover with a clean kitchen towel, and let it rest for 20 minutes.
  4. Preheat and prepare: Preheat oven to 425°F. Line a baking sheet with parchment paper. Fill a large pot with about 6 cups of water and bring to a boil. Carefully add the baking soda (it will fizz).
  5. Shape the bites: Turn the rested dough onto a lightly floured surface. Pat into a rectangle about ½ inch thick. Cut into small squares about 1 inch each.
