  • 3 medium overripe bananas (about 1 ½ cups mashed)
  • 1 cup grated zucchini, packed (about 1 medium zucchini)
  • 2 cups (240 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ½ cup (1 stick, 113 g) unsalted butter, melted and cooled
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (175 g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and gently squeeze out excess moisture.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg (if using). Set aside.
  4. In a separate bowl, mash the bananas until smooth but slightly chunky. Stir in grated zucchini, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until combined.
  5. Slowly add the dry ingredients to the wet mixture, stirring gently just until combined. Avoid overmixing.
  6. Fold in the chocolate chips evenly throughout the batter, reserving a few to sprinkle on top if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top. Scatter reserved chocolate chips on top if using.
  8. Bake for 50 to 60 minutes, checking doneness with a toothpick inserted in the center. It should come out with a few moist crumbs but no raw batter. Tent with foil if browning too quickly.
  9. Cool the bread in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
  10. Slice and enjoy warm or at room temperature. Store leftovers wrapped or in an airtight container.

Notes

Squeeze excess moisture from zucchini to avoid soggy bread. Mix batter just until combined to prevent toughness. Use very ripe bananas for best sweetness and moisture. Bake on middle rack and test doneness with a toothpick. Cool bread before slicing to set texture.
