No-Churn Mint Watermelon Sorbet

A quick and easy no-churn sorbet combining fresh watermelon and mint with a creamy texture, perfect for a refreshing summer treat without the need for an ice cream maker.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed
  • 1/4 cup (1012 leaves) fresh mint leaves, roughly chopped
  • 1/3 cup (65g) granulated sugar or 1/4 cup (85g) honey
  • 1/2 cup (120ml) heavy cream, chilled
  • 1 tablespoon (15ml) fresh lime juice
  • Pinch of salt
  • Optional: 1 teaspoon vanilla extract
  • Optional dairy-free substitute: full-fat coconut milk or cashew cream

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks and remove any seeds.
  2. Add watermelon chunks and roughly chopped mint leaves into a blender and blend until smooth, about 1-2 minutes.
  3. Add sugar or honey, fresh lime juice, and a pinch of salt to the blender and blend for another 30 seconds. Taste and adjust sweetness if needed.
  4. Optional: Strain the mixture through a fine-mesh sieve for a smoother texture.
  5. In a separate bowl, whisk the heavy cream until soft peaks form, about 2-3 minutes.
  6. Gently fold the whipped cream into the watermelon mixture using a spatula, being careful not to deflate the cream.
  7. Transfer the mixture into a shallow freezer-safe container, cover tightly, and freeze for at least 4 hours until firm.
  8. For best texture, stir the sorbet every hour during the first 2-3 hours to prevent large ice crystals.
  9. Remove from freezer about 10 minutes before serving to soften slightly. Scoop and garnish with fresh mint leaves if desired.

Notes

Use ripe, juicy watermelon for best flavor. Whip cream to soft peaks and fold gently for creamy texture. Stir sorbet during freezing to prevent ice crystals. Can substitute heavy cream with coconut milk for dairy-free version. Straining is optional for smoother texture.
