Juicy, golden-brown pork chops are seared to perfection and finished in a fragrant garlic butter sauce. This quick, one-pan meal is perfect for a light yet satisfying dinner any night of the week.

Ingredients

Scale
  • 4 bone-in pork chops, about 1 inch thick (boneless works too)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon Dijon mustard
  • 4 sprigs fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper. Let sit at room temperature for 10 minutes.
  2. Place a large cast iron skillet or heavy-bottomed pan over medium-high heat. Add olive oil. When the oil is shimmering and almost smoking, carefully place the pork chops in the pan. Do not move them. Sear for 3-4 minutes until a deep golden-brown crust forms. Flip and cook for another 2-3 minutes. Internal temperature should be around 130°F (54°C). Remove chops to a plate and set aside.
  3. Reduce heat to medium-low. Add butter to the pan. Once melted, add minced garlic and fresh thyme sprigs. Cook for about 30 seconds, stirring constantly, until fragrant but not browned.
  4. Pour in chicken broth and add Dijon mustard. Use a wooden spoon to scrape up browned bits from the bottom of the pan. Let simmer for about 1 minute until slightly thickened.
  5. Return pork chops and any accumulated juices to the pan. Spoon garlic butter sauce over each chop. Cook for 2-3 minutes, turning once, until internal temperature reaches 145°F (63°C) for medium.
  6. Remove pan from heat. Transfer pork chops to a serving platter. Let rest for 5 minutes. Spoon remaining sauce and garlic over chops and garnish with fresh parsley.

Notes

Pat pork chops dry for best sear. Don’t overcrowd the pan. Use an instant-read thermometer to avoid overcooking; target 145°F (63°C). Let meat rest 5 minutes before serving. For thicker chops (1.5 inches+), finish in a 400°F (200°C) oven for 8-12 minutes after searing.
