This creamy, perfectly spiced overnight oats recipe started as a happy accident and became a most-requested breakfast. It’s make-ahead, no-oven-needed, and perfect for fall gatherings.

Ingredients

Scale
  • 2 cups (180g) rolled oats (old-fashioned)
  • 1 cup (240g) pumpkin puree (100% pure, not pumpkin pie filling)
  • 2 cups (480ml) milk of choice (whole, oat, or almond)
  • 1/4 cup (60ml) pure maple syrup
  • 2 teaspoons pumpkin pie spice (or homemade: 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp allspice)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons chia seeds (optional but recommended)
  • 1/2 cup (120g) Greek yogurt (plain or vanilla, for serving)
  • Toppings: chopped pecans or walnuts, extra maple syrup, cinnamon, dried cranberries (optional)

Instructions

  1. In a large bowl or jar, whisk together 2 cups (480ml) milk, 1 cup (240g) pumpkin puree, 1/4 cup (60ml) maple syrup, 1 teaspoon vanilla extract, and 1/4 teaspoon salt until smooth.
  2. Stir in 2 cups (180g) rolled oats, 2 teaspoons pumpkin pie spice, and 2 tablespoons chia seeds (if using). Mix well so everything is evenly distributed and oats are submerged.
  3. Transfer the mixture to an airtight container or jar. Press down gently with a spoon to moisten all oats.
  4. Refrigerate for at least 6 hours, preferably overnight (8-12 hours). Do not leave for more than 48 hours.
  5. In the morning, stir the oats. If too thick, add a splash of milk. Portion into bowls, top with a dollop of Greek yogurt and desired toppings.

Notes

For best texture, use rolled oats (not quick or steel-cut). If using gluten-free oats, ensure they are certified gluten-free. For dairy-free, use oat milk and dairy-free yogurt. The oats are best within 2 days but keep up to 4 days in the fridge. Add a splash of milk if too thick after refrigeration.
