Ingredients

Scale
  • 1.5 pounds beef chuck or bottom round, cut into 1-inch chunks
  • 2 pounds red or Yukon Gold potatoes, scrubbed and sliced into ¼-inch rounds
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • ½ cup beef broth (low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups shredded sharp cheddar cheese (about 8 oz)
  • ¼ cup grated Parmesan cheese (optional)
  • 2 tablespoons chopped fresh parsley for garnish (optional)

Instructions

  1. Prep the beef and potatoes: Pat the beef chunks dry with paper towels. Season generously with salt and pepper. Slice the potatoes into even ¼-inch rounds.
  2. Brown the beef (optional but recommended): Heat a tablespoon of oil in a skillet over medium-high heat. Working in batches, sear the beef chunks on all sides until browned, about 2-3 minutes per batch.
  3. Layer the casserole: In your slow cooker, start with a layer of potato slices, then a layer of beef chunks, and a sprinkle of diced onion and minced garlic. Repeat the layers until all the ingredients are used, ending with a layer of potatoes on top.
  4. Make the sauce: In a medium bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, and smoked paprika. Pour this mixture evenly over the layered ingredients in the slow cooker. Do not stir.
  5. Cook low and slow: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the beef is fork-tender and the potatoes are soft but not mushy.
  6. Add the cheese: About 30 minutes before serving, sprinkle the shredded cheddar and Parmesan evenly over the top. Cover and let the cheese melt and get bubbly. For a golden top, remove the lid for the last 10 minutes.
  7. Rest and serve: Turn off the slow cooker and let the casserole rest for 5-10 minutes. Garnish with fresh parsley if desired, and serve straight from the slow cooker or spoon into bowls.

Notes

For best results, shred your own cheese from a block. Browning the beef adds deep flavor but can be skipped if short on time. Let the casserole rest before serving to allow the sauce to thicken. If the casserole seems watery, remove the lid for the last 30 minutes of cooking.
