Perfect Cranberry Sauce with Orange & Rosemary - featured image

This quick and easy cranberry sauce combines tart cranberries with bright orange zest and woodsy rosemary for a perfectly balanced holiday side dish that comes together in under 20 minutes.

Ingredients

Scale
  • 12 ounces (340g) fresh cranberries (or frozen, unthawed)
  • ¾ cup (150g) granulated sugar
  • 2 tablespoons fresh orange zest (from about 1 large orange)
  • ¼ cup (60ml) fresh orange juice
  • 1 small sprig fresh rosemary (about 4 inches long)
  • ½ cup (120ml) water
  • Pinch of salt

Instructions

  1. Zest and juice the orange first. Wash the orange, then use a microplane to remove 2 tablespoons of zest, avoiding the white pith. Cut the orange in half and squeeze out ¼ cup of juice. Set both aside.
  2. In a medium saucepan, combine the cranberries, sugar, orange juice, water, and salt. Stir briefly.
  3. Place the saucepan over medium-high heat. Cook until the cranberries start to pop, about 3-4 minutes. Reduce heat to medium-low to maintain a steady simmer.
  4. Add the whole rosemary sprig to the pot. Simmer for 5 minutes to infuse the rosemary flavor.
  5. Continue simmering for another 5-7 minutes, stirring occasionally, until the cranberries have broken down and the sauce has thickened to a syrupy consistency. For a smoother sauce, cook an extra 2-3 minutes and mash the berries with the back of a spoon.
  6. Remove the pot from the heat. Use tongs or a fork to remove and discard the rosemary sprig.
  7. Stir in the fresh orange zest. Taste and adjust sweetness if needed, adding more sugar a tablespoon at a time.
  8. Let the sauce cool in the pot for about 10 minutes, then transfer to a serving dish or storage container. Serve warm, at room temperature, or cold.

Notes

For best flavor, make the sauce a day ahead to allow the flavors to meld. Use a whole rosemary sprig, not chopped leaves, to avoid texture issues. The sauce thickens as it cools. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
