Ingredients

  • Aged cheddar, sliced or cubed
  • Fresh mozzarella balls or bocconcini
  • Ricotta cheese blended with honey
  • Blue cheese crumbles (optional)
  • Thinly sliced prosciutto or serrano ham
  • Spicy chorizo slices or summer sausage
  • Salami rounds
  • Strawberries, hulled and halved
  • Blueberries
  • Cherry tomatoes, halved
  • Snap peas or cucumber slices
  • Assorted crackers (e.g., Carr’s)
  • Mini baguette slices, lightly toasted
  • Marinated olives (green and black mix)
  • Roasted nuts (almonds or pecans)
  • Fresh herbs like rosemary or thyme sprigs
  • Honey or fig jam for drizzling

Instructions

  1. Slice the aged cheddar into bite-sized cubes or thin slices (about 1/2 inch thick).
  2. Drain the fresh mozzarella balls and pat dry.
  3. In a small bowl, blend ricotta cheese with 1 tablespoon of honey until smooth and creamy. Set aside.
  4. Arrange prosciutto, chorizo, and salami slices on a plate. Fold or roll them for a more attractive presentation.
  5. Rinse strawberries, blueberries, cherry tomatoes, and snap peas under cold water.
  6. Hull and halve the strawberries, halve the cherry tomatoes, and trim snap peas.
  7. Slice a mini baguette into 1/4-inch thick rounds.
  8. Toast baguette slices in a preheated oven at 350°F for 5-7 minutes until golden and crisp, watching closely to avoid burning.
  9. Place small bowls or ramekins on the serving board for the ricotta-honey blend, marinated olives, and jams.
  10. Arrange cheeses in clusters, alternating colors and textures.
  11. Place folded or rolled cured meats near cheeses.
  12. Fill in spaces with fresh fruits, veggies, toasted baguette slices, and crackers.
  13. Scatter roasted nuts and fresh herb sprigs for garnish.
  14. Drizzle a little extra honey over the ricotta and some cheeses if desired.
  15. Add toothpicks or small forks for easy grabbing.

Notes

Let cheeses sit out for 15-20 minutes before assembling to enhance flavor. Toast baguette slices just before serving to avoid sogginess. Keep crackers separate until serving to maintain crispness. Use gluten-free crackers and dairy-free cheeses as needed for dietary restrictions. Balance colors and textures for an appealing presentation.
