This Perfect Salted Caramel Apple Cider Float is a quick and easy fall treat that combines cold vanilla ice cream with warm spiced apple cider and a ribbon of salty-sweet caramel. It’s the ultimate cozy drink for crisp autumn evenings.

Ingredients

Scale
  • 1 cup (240 ml) cold apple cider
  • 12 generous scoops vanilla bean ice cream
  • 2 tablespoons salted caramel sauce (divided)
  • Pinch of flaky sea salt (optional)
  • Cinnamon stick for stirring (optional)

Instructions

  1. Drizzle about 1 to 2 tablespoons of salted caramel sauce into the bottom of a tall glass or mason jar. Swirl to coat the bottom.
  2. Pour in about 1 cup (240 ml) of cold apple cider, leaving about an inch of space at the top.
  3. Add 1 to 2 generous scoops of vanilla bean ice cream on top of the cider.
  4. Drizzle another tablespoon of salted caramel sauce over the top of the ice cream, letting it cascade down the sides.
  5. Sprinkle a pinch of flaky sea salt over the top. Add a cinnamon stick for stirring if desired. Serve immediately with a long spoon.

Notes

Don’t over-stir! The beauty of this drink is the layers. Let the ice cream slowly melt into the cider as you sip. For best results, chill your glass in the freezer for 10 minutes before assembling. Use cold cider, not hot, to prevent the ice cream from melting too quickly. A good-quality thick salted caramel sauce is essential for the best flavor.
