Perfectly Cozy Kid-Approved Kielbasa Bean Soup

A hearty, budget-friendly soup with smoky kielbasa and creamy white beans that even picky eaters will love. Ready in 30 minutes, this one-pot meal is pure comfort in a bowl.

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced into 1/4-inch rounds
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 cups fresh spinach or kale, roughly chopped (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Brown the kielbasa: Heat olive oil in a large pot over medium-high heat. Add sliced kielbasa in a single layer and cook undisturbed for 3-4 minutes until deeply browned. Flip and cook another 2-3 minutes. Transfer to a plate with a slotted spoon.
  2. Sauté the vegetables: Reduce heat to medium. In the same pot, add onion, carrots, and celery. Cook for 5-6 minutes, stirring occasionally, until softened and onions are translucent.
  3. Add garlic and seasonings: Stir in garlic, oregano, thyme, smoked paprika, and black pepper. Cook for 30 seconds until fragrant.
  4. Add liquids and beans: Pour in chicken broth and undrained diced tomatoes. Add drained and rinsed cannellini beans. Stir, scraping up any browned bits. Bring to a boil.
  5. Simmer: Reduce heat to low and simmer uncovered for 15 minutes.
  6. Return kielbasa: Add browned kielbasa back to the pot. Simmer for 3-5 minutes until warmed through.
  7. Add greens (optional): Stir in spinach or kale and cook for 1-2 minutes until wilted.
  8. Taste and adjust: Add salt if needed. Optionally add a pinch of red pepper flakes for heat.
  9. Serve: Ladle into bowls and garnish with fresh parsley. Serve hot with crusty bread or crackers.

Notes

Don’t rush the browning of the kielbasa—it builds deep flavor. Use low-sodium broth and rinse beans to control salt. Soup tastes even better the next day. For a thicker soup, mash some beans against the pot before adding kielbasa.
