A quick and easy apple cider mimosa with a cinnamon sugar rim, ready in just 5 minutes. Perfect for fall brunches, this drink combines crisp apple cider with dry sparkling wine for a balanced, crowd-pleasing cocktail.

  • 1 1/2 cups (360 ml) prosecco or dry sparkling wine per glass
  • 2 tablespoons granulated sugar (for rim)
  • 1 teaspoon ground cinnamon (for rim)
  • Apple slices (for garnish, optional)
  • Cinnamon sticks (for garnish, optional)

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Mix until evenly distributed.
  2. Wet the rim of your glass: Hold the glass upside down and use a pastry brush or damp paper towel to lightly moisten the outside rim with water or apple cider.
  3. Coat the rim: Dip the moistened rim into the cinnamon sugar mixture at a slight angle, rotating until evenly coated. Tap off excess sugar and let sit for 30 seconds.
  4. Add apple cider: Pour 1/2 cup (120 ml) apple cider into the prepared glass, pouring slowly down the side to avoid disturbing the rim.
  5. Top with sparkling wine: Slowly pour 1 1/2 cups (360 ml) chilled prosecco or dry sparkling wine down the side of the glass to preserve carbonation.
  6. Stir gently: Give the drink one or two gentle stirs with a long spoon or cinnamon stick, or simply swirl the glass.
  7. Garnish and serve: Add a thin apple slice to the rim or drop a cinnamon stick into the drink. Serve immediately.

Notes

Chill all ingredients ahead of time. Use a dry sparkling wine (brut) to balance the sweetness of the cider. For a non-alcoholic version, substitute sparkling apple cider or dry ginger ale. The cinnamon sugar rim can be prepared up to an hour before serving.
