A quick and easy gluten-free green bean casserole with crispy onions, ready in 35 minutes. Perfect for weeknights or holidays, this creamy, crunchy dish uses simple ingredients and is a crowd-pleaser.

Ingredients

Scale
  • 24 oz (680g) frozen green beans, thawed and drained
  • 10.5 oz (298g) can cream of mushroom soup (gluten-free)
  • 1/2 cup (120ml) full-fat canned coconut milk
  • 2.8 oz (80g) gluten-free crispy onions, divided
  • 1 tablespoon gluten-free soy sauce or tamari
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (plus more to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thaw and drain your green beans. Place frozen green beans in a colander and run cool water over them for about 2 minutes. Let them drain completely, then pat dry with a clean kitchen towel or paper towels.
  3. Mix the creamy base. In a large mixing bowl, combine the cream of mushroom soup, full-fat coconut milk, gluten-free soy sauce, garlic powder, black pepper, and salt. Whisk until smooth.
  4. Add the green beans and half the crispy onions. Toss the drained green beans into the bowl with the sauce. Add about half of the gluten-free crispy onions. Fold everything together gently until every green bean is coated.
  5. Transfer to the baking dish. Pour the mixture into a greased 9×13-inch baking dish and spread it into an even layer.
  6. Top with remaining crispy onions. Sprinkle the rest of the crispy onions evenly over the top. Do not press them down.
  7. Bake covered for 15 minutes. Cover the dish loosely with aluminum foil and bake for 15 minutes.
  8. Remove foil and bake for 10 more minutes. Take off the foil carefully and continue baking for another 8-10 minutes, until bubbly around the edges and golden brown on top.
  9. Let it rest for 5 minutes. This allows the casserole to set up.
  10. Serve hot. Spoon onto plates or into bowls.

Notes

For best results, shake the can of coconut milk vigorously before opening. If the onions brown too quickly, cover with foil again. To make ahead, assemble without topping and refrigerate up to 24 hours; add topping and add 5-7 minutes to covered baking time.
