This quick honeynut squash soup with crunchy pepitas is a creamy, dairy-free soup that comes together in under 30 minutes. Roasted honeynut squash (skin on) blends into a silky base with warm spices, topped with smoky, crunchy pepitas for the perfect weeknight meal.

Ingredients

Scale
  • 2 medium honeynut squashes (about 1.5 lbs total), halved lengthwise and seeded, skin left on
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 3 cups low-sodium vegetable broth
  • ½ cup full-fat coconut milk
  • Salt and black pepper to taste
  • ⅓ cup raw pepitas (pumpkin seeds)
  • 1 teaspoon olive oil (for pepitas)
  • ¼ teaspoon smoked paprika
  • Pinch of salt (for pepitas)
  • Fresh thyme leaves or a drizzle of coconut milk for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the honeynut squashes lengthwise and scoop out the seeds. Place cut-side up on a parchment-lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20-25 minutes until fork-tender and caramelized.
  2. While the squash roasts, make the crunchy pepitas: Heat a small skillet over medium heat with olive oil. Add pepitas and stir constantly for about 1 minute until fragrant. Add smoked paprika and salt, stir for 30 seconds, then remove from heat and transfer to a plate to cool.
  3. In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and cook for 4-5 minutes until translucent. Add minced garlic and grated ginger (if using) and cook for 30 seconds. Stir in cumin, cinnamon, and cayenne and cook for 15 seconds.
  4. Pour in vegetable broth and scrape up any browned bits. Add the roasted squash (flesh and skin) to the pot. Bring to a simmer and cook for 5 minutes.
  5. Remove from heat and use an immersion blender to puree until smooth. (If using a regular blender, let cool slightly and blend in batches.)
  6. Stir in coconut milk and warm over low heat for 2-3 minutes. Adjust seasoning with salt and pepper to taste.
  7. Ladle into bowls and top with crunchy pepitas and optional garnish of fresh thyme or coconut milk swirl. Serve immediately.

Notes

Don’t skip roasting the squash—it concentrates the sugars and adds depth. Toast pepitas separately and watch closely to avoid burning. Season in layers for best flavor. Adjust consistency with extra broth or by simmering to reduce. For a dairy-free version, use coconut oil instead of butter. If using butternut squash, peel it first as the skin is too tough.
