Tender, juicy pork chops with caramelized roasted apples in a sweet-tangy maple glaze. This one-pan weeknight dinner comes together in about 30 minutes with simple ingredients and minimal cleanup.

Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 3 medium apples, cored and sliced into 1/2-inch wedges (Honeycrisp, Fuji, or Granny Smith)
  • 2 tablespoons unsalted butter, cut into small cubes
  • 1 tablespoon brown sugar (optional)
  • 1/4 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/3 cup pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line a baking sheet with parchment paper or foil.
  2. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and dried thyme. Let them sit at room temperature while you prep the apples, about 10 minutes.
  3. Core the apples and slice them into 1/2-inch wedges. Toss the apple slices with the brown sugar, cinnamon, and nutmeg. Set aside.
  4. In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, and minced garlic.
  5. Arrange the seasoned pork chops in the center of the prepared baking sheet, leaving a little space between each one. Scatter the apple wedges around the pork chops in a single layer. Dot the apples with the small cubes of butter.
  6. Brush about half of the maple glaze over the top of each pork chop.
  7. Roast for 15 minutes.
  8. Carefully remove the baking sheet from the oven. Using tongs, flip each pork chop over. Brush the remaining glaze over the tops. Give the apples a gentle stir to coat them in the pan juices.
  9. Roast for another 10-12 minutes, until the pork chops reach an internal temperature of 145°F (63°C) for medium, or 150°F (65°C) for well-done. The apples should be tender and caramelized.
  10. Let the pork chops rest on the pan for 5 minutes before serving.

Notes

Pat pork chops dry for better browning. Don’t skip the Dijon mustard—it balances the sweetness. Use an instant-read thermometer to avoid overcooking. Let apples get some color for best flavor. Double the glaze if you want extra sauce. For dairy-free, swap butter for coconut oil or plant-based butter. For low-sugar, reduce maple syrup to 1/4 cup and skip brown sugar.
