Ingredients

Scale
  • 2 lbs (900g) ground beef (80/20)
  • 1 cup (120g) breadcrumbs (plain or Italian-style)
  • 2 large eggs, room temperature
  • ½ cup (120ml) ketchup
  • 2 tablespoons (30ml) Worcestershire sauce
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • ½ cup (100g) packed brown sugar (light or dark)
  • ½ cup (120ml) ketchup (for glaze)
  • 1 tablespoon (15ml) apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan or baking sheet with foil or parchment paper.
  2. In a small bowl, make the glaze: whisk together ½ cup packed brown sugar, ½ cup ketchup, 1 tablespoon apple cider vinegar, and 1 teaspoon Dijon mustard. Set aside.
  3. In a large mixing bowl, combine 2 lbs ground beef, 1 cup breadcrumbs, 2 large eggs, ½ cup ketchup, 2 tablespoons Worcestershire sauce, 1 finely diced onion, 3 minced garlic cloves, 1 teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon dried thyme.
  4. Mix with your hands gently until just combined. Do not overmix.
  5. Transfer the mixture to your prepared pan or baking sheet. If using a loaf pan, press it in gently. If free-form, shape into a log about 8 inches long and 4 inches wide.
  6. Spoon about half of the brown sugar glaze over the top and spread evenly.
  7. Bake for 35 minutes.
  8. Remove from oven and spoon the remaining glaze over the top.
  9. Continue baking for 15-20 minutes, until an instant-read thermometer inserted into the center registers 160°F (71°C).
  10. Let the meatloaf rest in the pan for 10 minutes before slicing.
  11. Slice into 1-inch thick slices and serve with any extra glaze from the pan.

Notes

For extra moisture, add ¼ cup of milk to the meat mixture. If using ground turkey, add 1 tablespoon olive oil and an extra egg. For a gluten-free version, use gluten-free breadcrumbs or crushed pork rinds. Let the meatloaf rest for 10 minutes before slicing to ensure it holds together.
