These Quick Roasted Delicata Squash Rings with Maple Drizzle are a simple, delicious side dish that comes together in under 30 minutes. With just a few ingredients, you get caramelized, tender squash rings with a sweet maple glaze.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt (or ¾ teaspoon fine table salt)
  • ¼ teaspoon freshly ground black pepper
  • 3 tablespoons pure maple syrup (Grade A dark amber preferred)
  • Optional: flaky sea salt (like Maldon) for finishing
  • Optional: 1 teaspoon fresh thyme or rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Place a rack in the middle position. Line a baking sheet with parchment paper.
  2. Wash the delicata squash well, pat dry, and trim off the tip and stem end. Slice crosswise into ½-inch (1.3 cm) thick rings.
  3. Use a small spoon to scoop out the seeds from the center of each ring.
  4. Place the squash rings in a mixing bowl. Drizzle with olive oil, sprinkle with salt and pepper, and toss gently with your hands to coat evenly.
  5. Arrange the rings in a single layer on the prepared baking sheet, ensuring they do not overlap.
  6. Roast for 15 minutes, until the bottoms are browned and tops look slightly translucent.
  7. Remove from the oven, flip each ring with tongs, and drizzle evenly with maple syrup.
  8. Return to the oven and roast for another 5-7 minutes, until edges are deeply caramelized and syrup is bubbling. Watch carefully to prevent burning.
  9. Remove from the oven and let cool on the pan for 2 minutes. Transfer to a serving platter and sprinkle with flaky sea salt and fresh thyme if desired. Serve warm or at room temperature.

Notes

Don’t skip flipping the rings for even caramelization. Watch the maple syrup carefully in the last few minutes to prevent burning. For easier cleanup, use a silicone baking mat. Double the batch for meal prep; reheat in a 350°F oven for 5-7 minutes or in an air fryer. Avoid freezing as texture changes.
