This Quick Southern Cornbread Dressing with Sage Sausage is a comforting, savory dish that comes together in about 45 minutes. Perfect for weeknights or holidays, it features crispy edges, moist interior, and deep sage flavor from browning the sausage first.

Ingredients

Scale
  • 1 lb sage pork sausage (ground, not links; e.g., Jimmy Dean or Tennessee Pride)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 stalks celery, diced (about 1 cup)
  • 4 cups crumbled cornbread (store-bought or homemade; day-old preferred)
  • 2 cups low-sodium chicken broth
  • 2 large eggs, lightly beaten
  • 1 teaspoon dried sage (rubbed sage for more intense flavor)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper (freshly ground)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). If using a cast iron skillet, place it in the oven while preheating to get hot.
  2. Brown the sausage: Place a large skillet over medium-high heat. Add the sage sausage, breaking it up with a wooden spoon. Cook until browned and crispy, about 6 to 8 minutes. Use a slotted spoon to transfer sausage to a plate, leaving rendered fat in the pan.
  3. Sauté the vegetables: Reduce heat to medium. Add diced onion and celery to the same pan with sausage drippings. Cook for 4 to 5 minutes, stirring occasionally, until onions are translucent and celery softened. If pan looks dry, add a tablespoon of butter.
  4. Combine the base: In a large mixing bowl, add crumbled cornbread, cooked sausage, and sautéed vegetables. Sprinkle in dried sage, thyme, black pepper, and salt. Toss gently until evenly distributed.
  5. Add the liquid: In a small bowl or measuring cup, whisk together chicken broth and beaten eggs. Pour over cornbread mixture. Stir gently until well moistened. Mixture should be wet but not soupy—like a thick, chunky batter. If dry, add another splash of broth.
  6. Transfer to baking dish: If using a cast iron skillet, carefully remove from oven (use oven mitts). Spoon dressing mixture into hot skillet, spreading into an even layer. If using a baking dish, pour in and spread out.
  7. Bake to golden perfection: Brush top with melted butter. Bake for 25 to 30 minutes, until top is golden brown and edges are crispy. Center should be set and slightly firm. Let rest for 5 minutes before serving.

Notes

Don’t overmix to avoid dense dressing. Use day-old cornbread if possible; if fresh, toast crumbles at 300°F for 10 minutes. Season as you go. Watch liquid absorption—different cornbreads vary. For extra crispy edges, broil for last 2 minutes but watch closely. The eggs are crucial for binding.
