Quick spiced pumpkin pie overnight oats - featured image

These quick spiced pumpkin pie overnight oats are a creamy, cozy breakfast that tastes like pumpkin pie but takes only five minutes to prep the night before. Perfect for busy mornings, this grab-and-go meal is made with simple ingredients like rolled oats, pumpkin puree, and warm spices.

Ingredients

Scale
  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) unsweetened almond milk (or any milk)
  • 1/2 cup (120g) pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons (20g) chia seeds
  • 2 tablespoons (30ml) pure maple syrup
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Greek yogurt, chopped pecans or walnuts, dried cranberries or raisins, extra maple syrup or honey, extra pumpkin pie spice for topping

Instructions

  1. Mix the wet ingredients: In a small bowl or liquid measuring cup, whisk together almond milk, pumpkin puree, maple syrup, and vanilla extract until smooth and no lumps remain.
  2. Combine the dry ingredients: In a separate small bowl, stir together rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt.
  3. Combine wet and dry: Pour the wet mixture into the dry mixture (or add dry ingredients to the jar with wet ingredients). Stir well until everything is evenly combined, scraping the bottom of the bowl.
  4. Portion into jars: Divide the mixture evenly between two pint-sized mason jars or airtight containers. Leave about an inch of headspace at the top.
  5. Refrigerate overnight: Screw lids on tightly and refrigerate for at least 6 hours, preferably 8-12 hours or overnight.
  6. Add toppings and serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with Greek yogurt, chopped pecans, dried cranberries, and a dusting of pumpkin pie spice. Eat cold or microwave for 45-60 seconds if desired.

Notes

Don’t skip the chia seeds—they are essential for the thick, creamy texture. Use rolled oats, not quick oats or steel-cut oats. For best results, mix pumpkin with milk first to avoid lumps. Taste and adjust sweetness/spice before refrigerating. Oats keep in the fridge for up to 5 days and taste even better on day 2 or 3.
