  • 8 ounces (225g) ground beef (80/20 works best)
  • 1/4 cup (30g) plain breadcrumbs (panko or regular)
  • 1 large egg (room temperature or cold)
  • 2 tablespoons grated Parmesan cheese
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)
  • 4 slider buns (brioche, white, or whole wheat)
  • 1/2 cup (120ml) marinara sauce
  • 4 slices provolone or mozzarella cheese (cut to fit buns)
  • Optional: butter for toasting the buns

Instructions

  1. Make the meatball mixture (5 minutes). In a medium bowl, combine the ground beef, breadcrumbs, egg, Parmesan, minced garlic, oregano, salt, and pepper. Use your hands to mix just until combined. Stop when no dry breadcrumbs remain.
  2. Form the meatballs (3 minutes). Roll the mixture into 8 small meatballs, about the size of a golf ball (roughly 1 ounce/28g each). Wet your hands slightly if sticky. Place on a plate.
  3. Cook the meatballs (8-10 minutes). Heat olive oil in a skillet over medium-high heat. Once the oil shimmers, add meatballs in a single layer. Cook 4-5 minutes without moving until deeply browned. Flip and cook another 4-5 minutes until cooked through (160°F/71°C internal temperature).
  4. Warm the sauce (2 minutes). Warm the marinara sauce in a small saucepan over low heat or microwave for 30 seconds.
  5. Toast the buns (2 minutes). Split slider buns and spread butter on cut sides if using. Toast cut-side down in a dry skillet over medium heat or under the broiler for 1-2 minutes until lightly golden.
  6. Assemble the sliders (2 minutes). Place bottom halves of toasted buns on a baking sheet. Add a spoonful of warm marinara to each, then place two meatballs on each. Top with a slice of cheese and add bun tops.
  7. Melt the cheese (2-3 minutes). Place assembled sliders under the broiler for 1-2 minutes until cheese bubbles and gets slightly golden. Watch closely.
  8. Serve immediately. Transfer sliders to plates and serve hot.

Notes

Don’t overwork the meatball mixture to keep them tender. Toast buns to prevent sogginess. For leaner beef, add a splash of olive oil or a tablespoon of milk to the mixture. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
