A simple and refreshing adult treat combining fresh strawberries, blueberries, and a splash of vodka or rum for a perfect summer popsicle with a subtle boozy kick.

  • 1 cup (150g) fresh strawberries, hulled and quartered
  • 1 cup (150g) fresh blueberries
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/2 cup (120ml) water
  • 1/3 cup (80ml) vodka or white rum
  • Fresh mint leaves (optional, a few sprigs)

Instructions

  1. Make the simple syrup: Combine 1/2 cup (120ml) water and 1/4 cup (50g) granulated sugar in a small saucepan. Heat gently over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool to room temperature (about 10 minutes).
  2. Prepare the fruit: Hull and quarter 1 cup (150g) fresh strawberries. Rinse 1 cup (150g) fresh blueberries and pat dry. Set aside a few whole berries for texture if desired.
  3. Blend the fruit: In a blender or food processor, combine the strawberries, blueberries, and lemon juice (2 tablespoons / 30ml). Pulse a few times to break down the fruit but leave some texture.
  4. Combine mixture: In a mixing bowl, stir together the fruit puree, cooled simple syrup, and 1/3 cup (80ml) vodka or white rum. If using fresh mint, finely chop a few leaves and mix them in.
  5. Fill the molds: Pour the mixture evenly into popsicle molds, leaving a little space at the top for expansion. Drop a few reserved whole berries into each mold if desired.
  6. Insert sticks and freeze: Place popsicle sticks into molds (if not built-in). Freeze for at least 6 hours or overnight until completely solid.
  7. Unmold and serve: Dip molds briefly in warm water for 10-15 seconds, then gently pull the popsicles free. Enjoy immediately.

Notes

Do not over-blend the fruit to keep texture. Balance alcohol content carefully to ensure proper freezing. Use simple syrup to keep popsicles smooth. Freeze for at least 6-8 hours or overnight. Chill liquor beforehand to help freezing. For non-alcoholic version, omit alcohol and add extra water or lemon juice. Dipping molds in warm water helps unmold popsicles easily.
