A bright and bubbly summer refresher combining fresh peaches, mint, black tea, and sparkling water for a perfectly balanced iced tea.

Ingredients

Scale
  • 4 black tea bags (e.g., Twinings or Tazo)
  • 2 large ripe fresh peaches, sliced
  • About 12 fresh mint leaves
  • 2 tablespoons honey or agave syrup (optional)
  • 2 tablespoons fresh lemon juice
  • 4 cups (1 liter) sparkling water, chilled
  • Ice cubes (preferably large)

Instructions

  1. Bring 4 cups (1 liter) of water to a boil. Remove from heat and steep 4 black tea bags for 5 minutes. Remove the bags and let the tea cool to room temperature, about 20 minutes (or chill in fridge for 10 minutes if in a hurry).
  2. Wash and slice 2 ripe peaches into thin wedges, reserving a few slices for garnish. Rinse and pat dry about 12 fresh mint leaves.
  3. In a pitcher, add the peach slices and mint leaves. Gently muddle with a muddler or the back of a wooden spoon to release juices and oils without turning to mush.
  4. Stir in 2 tablespoons honey or agave syrup (if using) and 2 tablespoons fresh lemon juice to brighten and balance flavors.
  5. Pour the cooled tea into the pitcher over the muddled peaches and mint. Stir gently to combine.
  6. Just before serving, add 4 cups (1 liter) of chilled sparkling water to maintain fizz.
  7. Serve over large ice cubes, garnished with reserved peach slices and a sprig of mint.

Notes

Avoid over-steeping tea to prevent bitterness. Use ripe but firm peaches to avoid mushy texture. Muddle mint gently to prevent bitterness. Add sparkling water only just before serving to keep bubbles fresh. Tea base can be made ahead and refrigerated without sparkling water for up to 2 days.
