These strawberry lemonade vodka slushies offer a perfect balance of tart lemonade, sweet strawberries, and a vodka kick with a unique icy texture, making them an ideal summer drink.

  • 1 ½ cups fresh strawberries, hulled and quartered
  • ½ cup freshly squeezed lemon juice
  • ¼ cup simple syrup
  • 1 cup vodka
  • 4 cups ice cubes
  • ½ cup water
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Hull and quarter fresh strawberries. Juice lemons to get about ½ cup of fresh lemon juice. Set aside.
  2. If you don’t have pre-made simple syrup, combine equal parts sugar and water in a small saucepan over medium heat. Stir until sugar dissolves, then cool completely.
  3. In your blender, combine strawberries, lemon juice, simple syrup, vodka, water, and 3 cups of ice cubes. Blend on high until the mixture turns slushy and smooth but still has some texture — about 30-45 seconds.
  4. Add the remaining 1 cup of ice cubes if the slushie is too liquidy, blending again briefly.
  5. Taste test the slushie. If it’s too tart, add a little more simple syrup or a splash more vodka for balance. If too thick, add a tiny bit more water and blend again.
  6. Pour the slushies into chilled glasses or mason jars. Garnish with fresh mint leaves or a lemon wheel if desired. Serve immediately.

Notes

Do not overblend to maintain a slightly chunky, icy texture. Chill glasses beforehand to keep the slush longer. For a non-alcoholic version, replace vodka with sparkling water or lemon-lime soda. You can prepare the base without ice and refrigerate up to 24 hours, then add ice and blend before serving.
