A quick and easy Halloween party dip with layers of seasoned beef, refried beans, sour cream, salsa, and cheese, topped with a spooky spiderweb design made from Greek yogurt. It’s a crowd-pleaser that looks impressive but comes together in under 20 minutes.

  • 1 lb ground beef (80/20 works best)
  • 1 packet taco seasoning (such as Old El Paso)
  • 1 can (16 oz) refried beans
  • 1 cup sour cream (full-fat recommended)
  • 1 cup salsa (mild, medium, or hot)
  • 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack)
  • 1/2 cup plain Greek yogurt or extra sour cream (for spiderweb)
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • Tortilla chips (for serving)

Instructions

  1. Cook the ground beef: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned and cooked through (6-8 minutes). Drain excess fat. Reduce heat to low, add taco seasoning and 1/4 cup water, stir, and simmer for 2-3 minutes until sauce thickens. Set aside to cool slightly.
  2. Warm the refried beans: In a small saucepan or microwave, warm refried beans until spreadable. If too thick, stir in a tablespoon of water or salsa.
  3. Layer the base: Spread warm refried beans evenly on a large round platter (at least 12 inches wide) using the back of a spoon or spatula. Leave about an inch of space around the edge.
  4. Add the beef layer: Spoon seasoned ground beef over the refried beans and spread gently to keep layers distinct.
  5. Spread the sour cream: In a small bowl, stir sour cream until smooth. Spoon over beef layer and spread gently to the edges.
  6. Top with salsa and cheese: Spoon salsa over sour cream in small dollops (do not spread). Sprinkle shredded cheese evenly over the entire dip. Add black olives and green onions on top.
  7. Create the spiderweb: Spoon Greek yogurt or extra sour cream into a small zip-top bag. Snip off a tiny corner. Pipe a small circle in the center of the dip, then pipe concentric circles around it, spaced about an inch apart (4-5 rings). Take a toothpick or skewer, start from the center, and drag outward through all rings to the edge. Wipe toothpick clean and repeat every inch around the dip.
  8. Chill and serve: Refrigerate for at least 15 minutes before serving to set layers. Serve with tortilla chips arranged around the edge of the platter.

Notes

Let beef cool before layering to prevent layers from mixing. Use full-fat dairy for best texture. Don’t skip chilling step. For clean spiderweb, wipe toothpick between each drag. Can be assembled up to 24 hours ahead, but add spiderweb just before serving.
