A vibrant green Halloween cocktail that tastes like a tropical vacation meets a candy shop. Made with midori, white rum, coconut milk, and pineapple juice, this easy 5-minute drink is a crowd-pleaser that looks spooky and tastes amazing.

  • 2 oz Midori (melon liqueur)
  • 1 oz white rum
  • 2 oz canned coconut milk (full-fat)
  • 3 oz pineapple juice (100% juice)
  • ½ oz fresh lime juice
  • ½ oz simple syrup (optional)
  • Lime wheel or wedge for garnish
  • Green sprinkles or edible glitter (optional)
  • Ice cubes

Instructions

  1. Chill your serving glass in the freezer for 10-15 minutes, or fill with ice water while you prep.
  2. Roll a lime on the counter, cut in half, and squeeze to get ½ oz fresh lime juice.
  3. Fill the chilled glass about ¾ full with ice cubes.
  4. Pour 2 oz Midori over the ice.
  5. Add 1 oz white rum and stir briefly.
  6. Shake the can of coconut milk well, then pour 2 oz into the glass.
  7. Add 3 oz pineapple juice and stir gently to combine.
  8. Add the fresh lime juice and stir once more.
  9. Taste and adjust: add simple syrup for more sweetness, extra lime for tartness, or more pineapple juice if too strong.
  10. Garnish with a lime wheel and optional green sprinkles or edible glitter. Serve immediately.

Notes

For a frozen version, blend all ingredients with 1 cup of ice until smooth. For a non-alcoholic version, swap midori for melon syrup and rum for coconut water. Batch for parties by mixing midori, rum, and pineapple juice ahead; add coconut milk and lime fresh. Use large ice cubes to slow dilution.
