This creamy, spicy, and incredibly easy slow cooker buffalo chicken dip is the ultimate crowd-pleaser for game day, potlucks, or any gathering. Made with simple ingredients and a rotisserie chicken shortcut, it’s a set-it-and-forget-it appetizer that always disappears first.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or about 4 cups shredded rotisserie chicken)
  • 16 oz cream cheese, softened
  • 1 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 2 cloves garlic, minced
  • 1/4 cup crumbled blue cheese (optional, for topping)
  • 2 tablespoons chopped fresh chives or green onions (optional, for topping)
  • A dash of smoked paprika (optional, for topping)

Instructions

  1. Prep the chicken: If using rotisserie chicken, shred the meat into bite-sized pieces. If using raw chicken breasts, place them in the slow cooker and cover with water or chicken broth. Cook on low for 4-5 hours or high for 2-3 hours, until fork-tender. Drain, let cool slightly, then shred with two forks. Set aside.
  2. Mix the creamy base: In a medium mixing bowl, combine the softened cream cheese, ranch dressing, and Frank’s RedHot sauce. Use a hand mixer on low speed until completely smooth and well-combined. (A whisk works too.)
  3. Layer in the slow cooker: Lightly grease the inside of your slow cooker with non-stick spray. Place the shredded chicken in an even layer at the bottom. Pour the cream cheese mixture over the chicken. Sprinkle the shredded cheddar and Monterey Jack cheese on top. Do not stir yet.
  4. Slow cook to perfection: Cover the slow cooker with the lid. Cook on LOW for 2 hours, or on HIGH for 1 hour. Do not lift the lid during the first hour.
  5. Stir and serve: After 2 hours, remove the lid. Give everything a good stir. The dip should be thick, creamy, and uniform in color. If it looks thin, let it cook uncovered for another 15-20 minutes to thicken. Taste and adjust seasoning if needed.
  6. Garnish and keep warm: Sprinkle the top with crumbled blue cheese and chopped chives or green onions. Switch the slow cooker to the ‘Warm’ setting. Serve directly from the slow cooker.

Notes

For best results, cook on low to prevent dairy from separating. If dip is too thick, stir in a splash of milk or chicken broth. If too thin, stir in a tablespoon of cornstarch mixed with two tablespoons of cold water and cook for another 10 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
