These Ultimate Bacon Cheeseburger Sliders are a quick and easy crowd-pleaser perfect for parties, featuring juicy beef patties wrapped in crispy bacon, melted cheddar, and a special homemade sauce.

  • 1.5 pounds ground beef (80/20 preferred)
  • 12 slider buns (soft but sturdy, e.g., King’s Hawaiian)
  • 12 slices bacon, cooked until crispy
  • 6 slices sharp cheddar cheese, halved
  • 1 small yellow onion, finely diced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon pickle juice (optional)
  • Pinch of cayenne pepper
  • Optional toppings: pickle slices, leaf lettuce or baby spinach, tomato slices

Instructions

  1. Preheat oven to 400°F (200°C). Arrange bacon slices on a foil-lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels and set aside.
  2. In a small bowl, whisk together mayonnaise, ketchup, mustard, Worcestershire sauce, pickle juice, and cayenne pepper. Chill in the fridge.
  3. In a large bowl, combine ground beef, diced onion, garlic powder, smoked paprika, salt, and pepper. Mix gently to combine.
  4. Divide mixture into 12 equal portions (about 2 ounces each). Flatten into small patties roughly the size of slider buns. Press a slight indentation in the center of each patty.
  5. Heat skillet over medium-high heat. Cook patties 3-4 minutes per side, flipping once. Place half slice of cheddar on each patty after flipping to melt.
  6. Slice buns in half and lightly toast in oven or skillet for about 2 minutes until golden.
  7. Assemble sliders by spreading special sauce on bottom bun, adding cheesy patty, topping with crispy bacon and optional pickles, lettuce, or tomato. Cap with top bun.
  8. Arrange sliders in a baking dish, cover loosely with foil, and warm in a 350°F (175°C) oven for 5-7 minutes if not serving immediately.

Notes

Do not overmix the meat to avoid dense patties. Press an indentation in patties to prevent puffing. Cook bacon in the oven for crispiness and to free stove space. Toast buns to prevent sogginess. Keep sauce separate until assembly to maintain bun texture. Reheat sliders covered in oven to keep buns soft and patties juicy.
