These Wholesome Black Cat Sugar Cookies are soft, tender, and just sweet enough, made with whole wheat pastry flour for a subtle nuttiness. They’re the perfect Halloween treat that tastes indulgent but uses simple, wholesome ingredients.

Ingredients

Scale
  • 1 ½ cups whole wheat pastry flour
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ⅔ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk
  • 2–3 teaspoons black cocoa powder (optional, for black color)
  • OR 1 tablespoon activated charcoal powder (food-grade, optional)
  • Royal icing or simple glaze (for decoration)
  • Orange or green sprinkles (for eyes)
  • Black sanding sugar (optional, for sparkle)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the whole wheat pastry flour, all-purpose flour, baking powder, and salt. If using black cocoa powder, whisk it in now.
  3. In a large bowl, beat the softened butter and granulated sugar together with a hand mixer on medium speed until light and fluffy, about 2 to 3 minutes.
  4. Add the room-temperature egg and vanilla extract, beating until just combined. Then add the milk and beat again.
  5. With the mixer on low speed, gradually add the flour mixture in two or three additions, mixing until just combined. If using activated charcoal, add it with the last addition of flour.
  6. Lightly flour your work surface and rolling pin. Take about half the dough and roll it out to about ¼-inch thickness.
  7. Dip a black cat cookie cutter in flour, then cut out shapes. Transfer cut cookies to prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 8 to 10 minutes, until edges are just set and bottoms are lightly golden. The centers will look slightly underdone.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely before decorating.
  10. Repeat with remaining dough, gathering scraps and re-rolling once or twice.

Notes

For best results, use whole wheat pastry flour for tenderness. If dough gets too soft, chill for 15 minutes. Bake one sheet at a time for even baking. Cookies can be frozen undecorated for up to 3 months.
