Wholesome Slow Cooker Halloween Chili for a Crowd

A hearty, crowd-pleasing chili made with lean ground turkey, sweet potatoes, and kidney beans, simmered low and slow in a flavorful broth. Perfect for Halloween parties or cozy fall dinners.

  • 2 lbs (900g) lean ground turkey (93/7)
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (14.5 oz / 411g each) fire-roasted diced tomatoes
  • 2 cans (15 oz / 425g each) kidney beans, drained and rinsed
  • 1 cup (240ml) low-sodium vegetable or chicken broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, sliced green onions, lime wedges

Instructions

  1. Brown the turkey: Heat a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink (6-8 minutes). Transfer to a 6-quart slow cooker.
  2. Sauté aromatics: In the same skillet, cook the diced onion for 2-3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Scrape into the slow cooker.
  3. Add vegetables and beans: Add the diced sweet potatoes, drained kidney beans, and fire-roasted tomatoes (with juices) to the slow cooker. Stir gently.
  4. Season: Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and pepper over the top. Pour in the broth. Stir thoroughly to combine.
  5. Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until sweet potatoes are tender.
  6. Taste and adjust: About 30 minutes before serving, taste and adjust seasoning. Add more salt, a pinch of cayenne, or a squeeze of lime if desired.
  7. Serve: Ladle into bowls and let everyone customize with desired toppings.

Notes

For a vegetarian version, swap ground turkey for 2 more cans of beans (pinto or cannellini) and use vegetable broth. If chili is too thin, remove lid and cook on HIGH for 20-30 minutes. If too thick, stir in extra 1/4 cup broth. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
