A quick and easy fall snack mix combining crunchy pecans, chewy candy corn, and crispy oats with maple syrup and cinnamon. Perfect for autumn gatherings, this wholesome treat comes together in under 25 minutes and is a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 cup raw pecans (about 100g)
  • 1/2 cup candy corn (about 85g)
  • 1/2 cup rolled oats (about 45g)
  • 2 tablespoons pure maple syrup (30ml)
  • 1 tablespoon coconut oil, melted (15ml)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/4 cup dried cranberries (optional, about 30g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the raw pecans and rolled oats. Stir to mix evenly.
  3. In a small microwave-safe bowl, melt the coconut oil and maple syrup together in 20-second bursts, stirring between each, until smooth (about 40-60 seconds total).
  4. Stir the vanilla extract and cinnamon into the melted mixture.
  5. Pour the wet mixture over the pecans and oats. Use a spatula to stir until everything is evenly coated.
  6. Spread the mixture in a single layer on the prepared baking sheet, avoiding too much overlap.
  7. Bake for 10 minutes, then remove from the oven and stir to flip everything around.
  8. Return to the oven and bake for another 5-7 minutes, until deep golden brown and fragrant.
  9. Remove from the oven and let cool completely on the baking sheet (about 15-20 minutes).
  10. Once cooled, transfer to a bowl and gently stir in the candy corn and dried cranberries (if using).
  11. Taste and add a pinch more salt if needed.

Notes

Do not add candy corn before baking or it will become a sticky, burnt mess. For extra crunch, toast pecans alone for 3-4 minutes before adding syrup mixture. Watch the oven closely during the last few minutes to prevent burning. The mix continues to crisp as it cools. Store in an airtight container at room temperature for up to one week. Can be frozen (without candy corn) for up to three months.
